Tropical Shrimp Kabobs RecipeThis is a wonderful marinated grilled shrimp recipe for Tropical Shrimp Kabobs. Plan ahead for this recipe because you have to marinate the shrimp for a few hours. You really want it to absorb all of the tropical flavor of this recipe. Cream of Coconut comes in a can. You can find it in your local grocery store, usually in a specialty section like the hispanic section. If you can't locate it be sure to ask a store associate to help you. They should have it in stock. Ingredients: 1 lb. medium raw Shrimp - peeled & deveined In small bowl, combine reserved pineapple juice, cream of coconut, oil, soy sauce, garlic and crushed red pepper. Pour over Shrimp. Refrigerate 4 hours or overnight. Preheat Grill. On skewers, arrange Shrimp, pineapple chunks, and peppers, alternating them as you go.
