Fire up the grill for these grilled shrimp sticks. Try them with a warm apricot dipping sauce.
Ingredients:
1 lb uncooked peeled and deveined shrimp
1/4 cup olive oil
2 garlic cloves, finely chopped
1/2 cup breadcrumbs (seasoned is best)
1/2 a lemon
salt & pepper to taste
Directions:
Preheat grill to medium heat.
Rinse shrimp and pat dry. Combine the garlic and olive oil. Place shrimp in a bowl and add the garlic and olive oil mixture. Add the breadcrumbs and toss to evenly coat the shrimp.
Thread the shrimp onto skewers. Grill over medium heat for approx. 2 minutes per side, or until they are opaque in the center and crumb coating starts to brown.
When they are done, serve on a platter. Squeeze lemon juice over shrimp and salt & pepper to taste.
Note: If using wooden skewers, soak them in water while preparing the shrimp. I usually try to soak them for about 30 minutes. It prevents them from burning.
Here is an apricot sauce you might enjoy with your shrimp.Apricot Dipping Sauce:1/2 cup apricot preserves
1 tablespoon water
2 teaspoons fresh lime juice
2 teaspoons soy sauce
1 teaspoon Dijon mustard
1/4 teaspoon minced peeled fresh gingerPurée all ingredients in a blender until smooth. Serve with Shrimp.
