You need to plan ahead with this Cajun Grilled Shrimp recipe but it is worth the wait!
I usually get this ready in the morning before work and let it marinate all day.
Be sure to use only raw shrimp for this recipe. Don't start with precooked shrimp because it won't turn out as good.
You can use frozen shrimp since you will be marinating it for so long anyway. I usually start with frozen raw shrimp, rinse it for a minute or two under cold running water, pat dry with papertowels and then toss it into a baggy with the marinade. Place it in the fridge and it will be ready to go when you get home.
Marinade Ingredients:
1 cup dry white wine
1 cup olive oil
1/2 cup chopped basil
1 Tbsp. coarse black pepper
1/2 tsp. cajun spice
16+ large raw Shrimp, peeled, deveined (leave on tails)
Thin lemon slices
Directions:
Mix marinade in shallow bowl, add Shrimp, cover, refrigerate for at least 3 hours, turning occasionally.
Set grill on high heat. Skewer Shrimp and lemon slices on skewers, alternating. Grill until Shrimp just become opaque basting occasionally, about 3 minutes per side.
